Today I will be sharing one of my very favorite summer recipes - chickpea salad.
Chickpea Summer Salad
2 cans chickpeas/garbanzo beans, rinsed
1 large cucumber, chopped
1 small container grape tomatoes, halved
1 bunch of basil, chopped
feta cheese, crumbled
1/4 cup lemon juice
1/4 cup olive oil
1 teaspoon garlic, minced
1/2 teaspoon black pepper
1/4 teaspoon salt
Combine all salad ingredients in a large bowl, mixing together. In a small jar, combine dressing ingredients and shake well. Pour over salad just before serving. Enjoy!
If you plan on splitting up the salad for lunches or dinners, I suggest leaving it undressed until you are ready to eat it. Refrigerate the salad, but store the dressing at room temperature.
